I wanted to share this delectable photo with you (and brag a little). This is my Valentine's Day dinner. And, as I'm sure you can tell, it was really, super-duper, darn good! The recipe came from the vegan cooking bible,
Veganomicon. This dish is a little time consuming and labor intense. But, oh my goodness, it's tasty! Full of things I LOVE; pineapple, red peppers, chillies, peas, garlic, basil, mint, ginger, lime, cashews, and a dousing of soy sauce!!! Yum.
